Fajitas
Serves 6-8
Warm yourself this winter with the heat of Beatrix’s
fabulous fajitas. The mild sensation of pasilla chilies
can be just right for warding off the winter chill.
Fresh pasillas are rich in flavor without adding too
much heat. They are considered to be mild to medium
on the chili index.
This dish is a favorite amongst our guests when we
serve our Mexican tostado bar. Accompanied by warm tortillas,
black or pinto beans, rice, salsa, guacamole and sour
cream; you are in for a feast. The great news is how
easy this dish is to prepare.
Ingredients:
1-2 onions
4 fresh pasilla chilies
4-5 small zucchini
1-2 cloves garlic
1-2 tablespoons olive oil
salt
Mexican seasoning mix
¼ cup tofu or dairy sour cream
10 corn or whole wheat tortillas
Recipe:
Cut fresh pasilla chilies in half, lengthwise. Remove
and discard the seeds. Cut chilies in half again and
then slice into medium sized strips. Slice onion into
half moons and sauté in olive oil until light
brown. Add minced garlic and pasillas and sauté
for 10 minutes. Add zucchini chopped into small cubes,
salt and Mexican seasoning to taste and sauté
5 minutes longer. Finish by adding (tofu or dairy) sour
cream. Serve on or with warmed tortillas.
